This time, I enjoyed the "Special Omakase Course" along with a celebratory plate😍💐
In the private seating area on the 2F of SUSHI TOKYO 81,
It was delightful to relax and savor the omakase made with seasonal ingredients🥺
① Shijimi clam broth
Comforting and full of flavor right from the start 🫖
② Isaki fish from Sukumo Bay & tuna head
Isaki had a delightful charred aroma and tender texture🐟
The tuna head, a rare part making up only 0.3% of the whole fish, was meltingly good…🥺
③ Mozuku seaweed noodles style + whale tail meat
Mozuku had a pleasantly mild flavor from the broth and an enjoyable texture,
while the whale meat was fat-rich and melted like o-toro,
so soft it was surprising😳💗
Rock chive aroma added a nice flavor change too◎
④ Snapper (Sukumo Bay) & kasugo snapper & horse mackerel
Different seasoning and garnishes for each,
made exploring the texture and richness exciting🐟✨️
⑤ Braised abalone & negimaki (scallion rolls)
The richness of the liver was quite indulgent
Negimaki had the punch of yuzu pepper and distinct tuna flavor
⑥ Smoked sawara (with sakura chips)
The aroma was enveloping with an underlying richness
⑦ Kuruma prawn (Tomino)
From Kagoshima, kuruma prawns,
were large with a firm, bouncy texture 🦐
⑧ Steamed egg custard with bamboo shoots and sakura shrimp
Nice and hot, infused with the flavors of broth and shrimp
⑨ Chutoro & fresh codfish & braised conger eel (lightly salted)
Chutoro was soft and velvety
Fresh codfish is rarely had like this; its texture was appealing
The conger eel was fluffy and sweet 🤍
⑩ Aka miso soup
Very rich and full of umami, quite enjoyable☺️
⑪ Dessert
Andes Melon & Strawberry (Kirapika)🍓
Matcha raw chocolate was intensely rich and melted deliciously,
An butter monaka was crispy and flavorful as well 👶🏻🫶🏻
I was delighted to see Master Kikuchi again on this day☺️✨️
Overall, the satisfaction for each dish was high,
making it a place I would use for anniversaries or special occasions 🍣🥂
