We visited 'Wagyū Hitsumabushi Ichizen' opening on June 9 at PARCO_ya Ueno.
The wagyū used here is Hakata Wagyū of A4 rank or higher.
Additionally, the rice is Hokkaido-grown special A-grade "Nanatsuboshi",
and the broth uses products from "Futako", a katsuobushi specialty shop with over 100 years of history in Tsukiji,
showing a strong commitment to ingredients.
This time, we tried the store's signature dishes:

As it was served, I couldn't help but be drawn to the beauty of the wagyū spread across the entire bowl.
The glossy meat is incredibly soft and has a sticky texture.
As you chew, the sweetness and umami of the high-quality fat spread, leaving a luxurious aftertaste.
First, enjoy the authentic flavor of the wagyū as is.
Next, relish the change with condiments,
and finally pour the fragrant broth over for a hitsumabushi style.
The broth, made using bonito, tuna flakes, and mackerel flakes, enhances the rich umami of the wagyū.
