Enjoying the Seasonal Delicacies of Niigata at "Joetsu Yasuda Ginza 2-chome Store": Crab, Nodoguro, Torafugu, Wagyu, Abalone...

Enjoy the seasonal delicacies of Niigata and the skill of artisans at "Joetsu Yasuda Ginza 2-chome Store"✨️ This time, I indulged in the "Shirane Aoi" course featuring crab, nodoguro, torafugu, wagyu beef, and abalone.

Conveniently located directly connected to Ginza 1-chome station, yet the interior offers a serene Japanese ambiance that makes one forget the city buzz. With numerous private and semi-private rooms, it's perfect for business dinners or special occasions🍁

Starting with an assortment of seasonal appetizers, including homemade sesame tofu, grilled eggplant, Sado mozuku vinegar, pacific saury oshizushi, fukusa-yaki, and boiled peanuts. Each dish is meticulously crafted to evoke the season🍂

The "Kinu Otome" taro from Niigata stands out with its smooth and chewy texture, leaving a gentle impression♡

Next up was the boiled horsehair crab🦀 Packed with meat, the crab meat jelly and hebesu add a refreshing harmony. Despite its richness, the crab miso is free from any off-putting taste, allowing you to savor its natural deliciousness fully.

I was eagerly anticipating the salt-grilled nodoguro, and this was my first time having it whole…! The skin was crispy and fragrant, while the meat was surprisingly juicy, rich in flavor yet exquisite😋

The torafugu tataki had a delightful chewy texture, showcasing its freshness.

And the unexpected steamed abalone for a palate cleanser😳 Luxuriously soft, complemented by a rich liver sauce, leaving you in bliss♡

The roasted wagyu beef is accompanied by shoyu-koji and moromi, a combination that enhances the umami of the meat with the richness of fermentation✨️ The smoked mashed potatoes served on the side added a wonderfully aromatic touch to the pairing.

The deep-fried megisu, still piping hot🔥, had a crunchy texture on the outside and astonishingly juicy inside, quickly becoming a favorite…!

To end the meal, a clay pot rice made with Yashiro rice, a brand from Niigata🍚, topped with fatty salmon belly and plenty of ikura, combined with butter's richness for a luxurious finale.

The miso soup features Niigata's Marukyu miso, and afterward, a sweet treat using kyoho grapes and tea from Niigata🍇🍵. Each piece of tableware is beautifully crafted, adding to the joy of each dish served.

In addition to the exquisite dishes, we enjoyed a selection of Niigata's famous sake, such as Kame no O, Katafune, Shibata Nishiki Aki Agari, and Sotenbo Genshu, each pairing differently with the meal✨️ Impressively, there are over 40 types of sake available, including limited editions and rare finds✨️ Liquor lovers will appreciate the extensive selection of whiskey and shochu as well🥃

It's a place to savor the best of Niigata in a single course, from ingredients, tableware, ambiance, to accompanying drinks. A memorable spot for a serene Japanese dining experience in Ginza✨️
