"Spice Sushi Course"
It seemed unlikely to match at first,
but as soon as I tasted it, it was a "now I see" moment,
an unparalleled dining experience 🥺✨️
The owner originally ran a curry shop in Nagoya for 3 years.
Inspired by a curry his Indian friend made,
he trained in India and delved into the world of spices.
From this culmination came
the fusion of spices and Edo-style sushi
now called "spice sushi" 🍣✨️
The interior presents a chic, calm adult space,
and there's a pairing of natural wine available as well 🍷
First, freshly made Chawanmushi 🥄
The broth consists of fish bones and lemongrass,
and as you mix the paste on top,
it gradually transforms into the taste of curry 😳✨️
Even from the first dish, it was intriguing…!
Next, three pieces of sushi 🍣
Meji-na, nizazai,
and aji marinated in tamarind vinegar.
The sushi rice blends red vinegar with spices used in biryani,
and in place of wasabi, there's a special sauce inspired by Indian chutney✨️
The gradual immersion into spices is fun 🥺
Especially the aji, which is notably large,
with the tamarind vinegar's sweet and sour flavor being irresistible 🤍
The soup is rich with
the flavors of fish broth and clams.
The herbs like cilantro add a good accent,
providing a comforting deliciousness✨️
Following that are
confit oysters,
firefly squid,
a trio of zucchini peppered with flavor 🦪
Each dish is seasoned exquisitely, making the natural wine taste even better 🍷
What left a personal impression
was both the simmered and grilled eel ✨️
The simmered eel was cooked in curry,
soft and fluffy.
The grilled eel with yogurt and spices
prepared tandoori style,
was simply irresistible 🥺💗
Also appeared were large oysters
and crab miso sushi 🦀
The crab miso featured ginger and paprika,
perhaps the most spiced sensation of the day 😳
The tuna used in the center of the meal
filled every bite with thick, satisfying umami, pure happiness ✨️
Eggs prepared with a combination of sesame and fish sauce.
The blend of Japanese and Indian flavors was naturally captivating 🥚
The finale was a scatter sushi 🍣
With an abundance of nizazai, aji,
and bright paprika,
allowing the full journey through the world of spice sushi until the end✨️
Instead of oyster sushi, I opted
for a dessert 🍨
Ice cream and sweet red beans
utilized diverse spices like cardamom and cloves,
offering an aroma resembling chai☕️🥺💗
From start to finish,
"Spices can be used this way too…!" was a continuous revelation✨️
Fish roe and seafood are typically considered challenging to pair with wine,
