The owner, Shunta Hashimoto, entered the world of Japanese cuisine in his teens,
training in Kyoto, Fukuoka, and Ginza to hone his skills✨
Every morning he visits the Toyosu market,
personally selecting the finest ingredients
to create a unique omakase course 🍣
First was the deep-fried Sadonahara eggplant from Miyazaki 🍆
With the broth seeping into the eggplant,
it presented a gentle and warm taste 🥰
Next was the seared bonito🐟
Topped with homemade onions and fragrant seaweed,
the soft and chewy texture was irresistible✨
The grilled Mehikari fish was served with
homemade miso.
The skin was crispy and fragrant,
with a juicy inside, it perfectly complemented drinks 🥺
Nigiri started with parrotfish 🍣
The texture was astonishingly soft and sticky✨
The horse mackerel was full of umami,
while the sweet shrimp was juicy and creamy💓
The medium fatty tuna melted as soon as it hit the mouth,
