As the flagship of the soba brand “Shiomeijin”, born in Izumo City, Shimane Prefecture, “Shiomeijin Kiwami” opened in Tokyo’s Asakusa on October 25, 2025. The name embodies not only the meaning of “salt,” but also the wish to bring out the fullest flavor of the ingredients. Inheriting the tradition and pride of the “salt fields” that have continued since ancient times around Izumo Taisha, each bowl, honed daily by our craftsmen, promises an exceptional taste that will linger in your memory.
The interior is a refined, modern-Japanese space highlighted by a grand mural inspired by the ukiyo-e of Katsushika Hokusai. Enjoy a relaxed meal at the warm wood-grain counter and tables. The energy from the open kitchen and the aroma of freshly fried tempura whet the appetite. Please savor it to your heart’s content in a space where tradition and innovation merge.
Made lavishly with A4-grade Japanese Black wagyu beef, this is a bowl that truly embodies the “Kiwami.” Tender, thinly sliced wagyu and a soft-boiled onsen egg intertwine perfectly with fragrant 100% buckwheat soba. The warm dashi further enhances the ingredients’ umami, offering a blissful taste that warms both body and soul.
We serve the traditional Izumo soba style, “Wariko Soba,” in a luxurious combination unique to “Shiomeijin Kiwami.” The first tier features “Premium Japanese Black Wagyu,” the second offers crispy “Shrimp Tempura,” and the third is adorned with colorful “Condiments,” letting you enjoy three flavors at once. We make no compromises not only with soba but also with rice dishes. We use the branded rice “Takomai Koshihikari,” produced in Tako Town, Katori District, Chiba Prefecture.
