Inspired by Claude Monet’s garden, the interior is an extraordinary space adorned with projection mapping that spans entire walls and around 2,000 fresh flowers that change with the seasons. The sushi, offered in collaboration between the hard-to-book Kagurazaka restaurant “Konkon” and a long-established tuna wholesaler, is truly exceptional. Red-vinegared Edomae shari made with “Tochigi no Hoshi,” rated Special A in taste rankings, premium Ariake nori “Tenzan,” and our house-made nikiri soy sauce bring out the full flavor of seasonal toppings.
